Double Blog?!

I know, I know. A double blog?!

BUT the good news is - its NOT wedding related :)

While we were relaxing on the beach, I read a Glamour magazine. They had a recipe called Engagement Chicken. (They claim that this recipe is responsible for 70 plus engagements) So I thought I would see if it would make my brand new husband remember why he asked me to marry him - ha! Plus it has lemon in it, therefore I am SOLD!

Engagement Chicken: Roasted Chicken with Lemon and Herbs

Ingredients:

1 whole chicken
1/2 cup fresh lemon juice
3 lemons; 2 whole & 1 sliced lemon for garnish
Kosher or sea salt
Freshly ground pepper
Fresh Herbs (rosemary, sage, thyme, and parsley)

Directions:

1. Have an oven rack on the upper third and pre-heat the oven at 400*. Remove giblets from the chicken and run water through for 2 minutes.

2. Pat the chicken dry. Place in roasting pan with rack, breast side down. Pour the lemon juice all over the chicken, outside and inside. Season the chicken with the pepper and salt inside and out.

3. With a fork puncture 2 of the lemons in 3 places. Place both lemons in the chicken cavity. (If the lemon is sticking out, its ok)

4. Put the chicken in the oven. Lower the heat to 350* and roast the chicken for 15 minutes uncovered.

5. Remove the roasting pan from the oven. Using tongs, turn the chicken over, breast up. Insert a meat thermometer into the thigh, and put the chicken back in the oven. Roast for an hour.

6. (This is a diviation from the original recipe) Remove the roasting chicken from the oven, add the fresh herbs and baste the chicken with the juices in the pan. Return the chicken to the oven for an additional 18 minutes.

7. Remove from oven (Chicken should have reached 180* on the thermometer). Baste with juices and serve.

Delish! I served with broccoli and garlic smashed red potatoes with sauteed onions. J says he needs to make lots of money so he can come home to fabu meals and a clean house all the time. I guess thats success?! ENJOY!

So proud of Justin :)

Mrs. Massey being cute and funny, as always

And of course, Zaky the smart-ass... Pink Tickler what?!

Lovies

And then we decided it was necessary to walk to the building next door, to Zodiac/Manhattan/Whatever the bar is called now - the girls and I have spent countless nights having dance party there. I should say now, my goal was to not drink much this night and to be in bed and asleep by midnight...

This is Jarrett's move... not moves, just move.

Love her

Oh yesss

I did manage to leave the bar by midnight.. to come back to the hotel, where my entire family had taken over the lobby bar. So of course, I partook in the celebration.

All of the Heeg Side of the men, plus J

And the ladies, missing my mom, who apparently thought it was cool to be responsible and go to bed or something

Overall, we had an UGH-Mazing night with our families, friends and each other. Although the boys went back out while I mingled with my family.

Needless to say, if you read my blog from yesterday, I had a bit too much fun Friday and Saturday morning was a bit rough. It was deja vu for me - I did the same thing at Kayla's wedding, as one of her bridesmaids. BUT what I can say is that the only one I regret is doing it at Kayla's wedding. Not my own - I had the BEST time and am glad I didnt miss out by sleeping.

Wedding Days

We're home! & we're married!

We have lots to share... rehearsal dinner, wedding day, honeymoon.... yowzas! Thats a lot of catching up... BUT I'll make it more painless (or more painful, whichever way you feel) by making the wedding a daily post for the next few days.

For today - I am going to post my top 10 things to do/dont do /suggestions for your wedding...

10. Everyone says it goes by so quickly. I always thought this was a cliche, or something only my girly girl friends that said this. BUT, IT.IS.TRUE. SO FAST. Enjoy every second and definitely step back every now and then and "soak it up"

9. Use my vendors - THEY ROCK! Memory Makers Photography, Its Your Night Entertainment, R.Love Design, Romano's Bakery, Avanti Fountain Place, Hima Pandya (Make-up), Cozy Cakery, Bo. If you dont use these vendors, thats cool, but always remember mine were better than yours ;)

8. Have Hair and Make-Up come to you. DO.NOT. go to them! Soooo less stressful!

7. If you are getting ready at a hotel, have a friend get a room on the same floor as your suite to be able to sneak away to. ::Katie Lane, you were my savior!::

6. Hire a wedding planner/day of planner or have a friend conducting everything that is happening on-site. You do not want to know what is going on downstairs. Its worth it. (I am starting to do this on the side, but I also know others who do this, so contact me if you have questions!)

5. You're bound to have a meltdown or two the week of the wedding/and/or the day of. Its ok. Admit it and move on.

4. If you're worried about your tan - do what you normally do, dont act any different. If you Versa, Versa. If you Mystic, Mystic. If you go see someone to get sprayed (while I highly recommend Jenna Avery) go get sprayed. Well, I guess what I mean is if your method works, do it. If you are like Ross on Friends, than maybe you need to seek advice from your most well tanned friend.

3. Dont drink too much on Friday (I maaaay have accomplished doing this both as a bridesmaid AND as a bride), but also be sure to enjoy your family and friends. Its one of the few times in life all of these people are in one place.

2. At the end of the night, your hair doesnt matter. Keep dancing.

1. Surround yourself with only the best friends in your bridal party. You will not regret it. I know that this point alone is what saved my day :)

Well, that my "food for thought" on weddings right now. Look for pictures from all of the festivities this week. I'll be bloggin :)

Happy Tuesday!

Bridal Luncheon

Well, we are a week out and it was time to celebrate my bridesmaids! I have an amazing group of women supporting me through this wedding. Katie has driven to Dallas more times in the past year than she probably has ever wanted to. Amber listens to my crazy talk and calms me down. Heather is always here to keep me laughing. Jenna is always so supportive and calming - a fabu listener. Jordan is constantly helping, and making the experience fun - she brought me a wedding CD this week and a wedding mag with Q&A about not stressing out! And Lorin has kept me sane at the office while I multitasked our job and my wedding. I am pretty sure at some point EVERYone said - I cant believe its HERE! Oh but it is! 5 days to go! My parents helped me create the "grown up tea party" as Jenna called it. the weather was perfect... a bit windy, causing some slight issues prior to everyone coming, but it all worked out! The "good stuff" desserts, champagne glasses and prezzies :) Love these ladies! (Missing Lo) My ladies & my 2 mommas. Well - not so sure if I will be blogging anymore this week, so the next time I post, I am pretty sure that I will be a married woman! CRAZINESS!!!! Photobucket
