Thankful Thursday

Thankful Thursday:
Cooking Edition

With my travel schedule being so crazy the past few weeks, I realized how much cooking really means to me.

I gather inspiration for cooking from all over the place; My parents cooking, Chocolate Broccoli, Cooking Light magazine, Everyday with Rachel Ray, Food Network magazine.. and hoping to start to try Pinterest recipes as well.

Every time one of my magazines comes in the mail, I am on the couch or laying in bed, "dog-earing" every recipe I would like to try, or ones I think my picky-icky husband will eat! Its so relaxing and a great way for me to unwind.

I have realized over time, that they crazier the programs I come home from are, or the less I sleep on-site the more apt I am to cooking the first night I come home. Its almost like it is therapeutic to me.

I grew up in the kitchen with both of my parents. Sitting on the countertop are found memories to me. So I have decided today on Thankful Thursday, I will share a family recipe with all of you...

Scott & Debs Delish Chili! 

What you need:
1tbsp of Olive Oil
1lb of (Lean) Ground Beef
1 Chopped Onion
1 Chopped Green Pepper
1 minced Clove of Garlic (I personally use A.LOT.MORE.) 
2 Diced Stalks of Celery
1oz of Baking Chocolate
1 Can of Tomato Sauce
23oz Can of Stewed Tomatoes
1tbsp of Sugar
2 Alarm Chili Kit (looks like this) 
1lb Can of Kidney Beans (Optional; not happening in my house - duh!)

1. Chop the onion, green pepper and celery.


2. Brown the beef. Once cooked, add in onion, green pepper, and celery. Let sautee for about 5 minutes. Add chocolate, tomato sauce, tomatoes, and spices from the 2 Alarm Chili (I use all of each packet, except for the salt).

3. Simmer on low for 45 minutes. After this I generally allow the flavors to marry on the stove without heat for another hour or so.

4. We do frito pies at our house - so I pile in my Frito Scoops, top with chili, fresh onion and mexican style cheese. YUM!


So, this Thursday, I am thankful for cooking. A great stress reliever, and what happens in the room I believe is that heart of the home (kitchen!)

J&J: Wedding Weekend!

Wedding Wednesday: J&J Wedding Day!!!!

I havent done a "Wedding Wednesday" since, well, not long after our wedding... But J&J's day has come & gone soooo quickly! And a Wedding Wednesday was definitely in order!

Everything came together and turned out so beautifully. I am so so proud of Jordan - her creativity and how calm she was on the day of. I'll wait to get sappy until the end of this post.

Friday:

We started the wedding weekend with a fabulous bridal luncheon hosted by JoJo at Gather in McKinney. Saying that this venue was a perfect location, doesnt even tell you how great it was.





That evening we were headed to the ceremony venue for rehearsals. (I love Justin's face in this pic! I think he's excited!)

After the rehearsal dinner, we headed to the hotel and watched the Rangers game and continued our celebration!





Saturday:

In the morning JoJo and I headed to the venue and started setting things up. I cant tell you how many times I got the chills. It was just so perfect, and everything that JoJo had talked about wanting. It was so exciting. We met the other ladies for breakfast and then we all came to the venue before hitting up the spa.

Then it was off to the salon to get beautified and all put together!










JoJo took photos in Marianne's dress. (30 years vintage!) The dress fit her perfectly, and is such a special moment to have!





And we are all set to go!

I maaaay have played wedding planner at the end of the night and snuck a peak of their private dance... shhhhhh dont tell!




J&I hitched a ride home with friends... we maaaaaay have been locked out of our house for over an hour. Scaling fences, changing in the backyard, and eating pizza, could possibly have been how we ended our night along with dying laughing :)

J&I are so so so lucky to have J&J and to have been a part of their special day. We cant wait to have our kids grow together, take vacations together, and well just have best friends that we are sure will be around for every step of the way.

The wedding was just perfect. I dont think they could have asked for more. Beautiful weather. Amazing venues. Perfect details. Great guests. Lots of dancing. In my opinion its all you need.

And as you all have seen from my wedding and JoJo's wedding.. we need to start a business. Now all we need to do is figure out a name.... all J has still come up with is Modern Doily... not quite sold on it, but we will keep our wheels spinning.

DFF Halloween

I just realized I did not take very many pictures today... I am super disappointed! But we had a little Halloween luncheon at the office..

JoJo was kind enough to let me wear her "award winning" loofah costume! LOVE it! She is ridiculously creative - I would have never come up with this on my own!


We had the Spice Girls (Kasey B, Amanda, Kasey H, Amy & Jennifer)
