Easy Peasy Meals: Stuffed Pork Tenderloin

Here's another family recipe.. and also as delish as the others

(pic from my phone doesnt show how Yum this actually is)



Stuffed Pork

Ingredients
Pork tenderloin (sliced)
1 medium onion
1 apple (gala, pink ladu, fuji)
Rosemary
Garlic
Teriyaki Marinade
Sweet & Sour Sauce

Directions
Preheat the oven to 400*

Marinate your pork in the teriyaki sauce over night (or at least 30 minutes). Take the pork one piece at a time and place inside of a gallon zip lock baggie. Pound each piece with a meat hammer to about an eighth of an inch.

Take the onion chopped, apple chopped and about a tablespoon of garlic and tablespoon on rosemary in a food processor.

Take a piece of the pork and spread the filling across. Roll up each piece and secure with toothpicks. Top with sweet and sour sauce.

Bake for 25 minutes. Baset with sweet and sour mid-bake.

I serve with a starch and veg... those can be anything you prefer, but the staple is applesauce. Its a must for dipping!
